The cultivation of the olive tree in Tuscany dates back to the 7th century BC. Olive oil was initially used by the Greeks as a precious cosmetic.
Only later, in Etruscan and Roman times, it began to be used as a food. Olive growing is a significant element of the Maremma environment, traditions and culture, in which the olive tree finds optimal growth conditions that allow to obtain an oil with a rare fruity aroma and excellent biological value.
The cultivation of oil in this area has a very ancient tradition and its production was encouraged by nutritional and even religious reasons (some rites and ceremonies required the use of oil). The production area obtained particular recognition with the promulgation of an edict, in 1716, with which the Duke Cosimo III recognized the quality of olive and viticultural productions.
